Here is a recipe for making Sohan Halwa, a traditional sweet dish from Pakistan:
1 cup fine grit sooji (semolina)
1 cup sugar
1 cup ghee (clarified butter)
1 cup water
1/2 cup condensed milk
1/2 teaspoon cardamom powder
2 tablespoons almonds, chopped
2 tablespoons pistachios, chopped
Heat ghee in a large, heavy-bottomed pan over medium heat.
Add the sooji and roast it until it turns golden brown, stirring continuously.
In a separate saucepan, bring the sugar and water to a boil until the sugar has completely dissolved.
Add the dissolved sugar to the sooji and mix well.
Add the condensed milk to the mixture and stir continuously until the halwa starts to come away from the sides of the pan and forms a ball-like consistency.
Stir in the cardamom powder, almonds, and pistachios.
Remove the pan from heat and let the halwa cool for a few minutes.
Serve the Sohan Halwa warm or at room temperature.
